Jamaican Jerk Festival





Jamaican Jerk Festival held at Hedo 3 on Runaway Bay was a treat we did not expect when we arrived. We love to experience other cultures that are different from our lifestyle in Maine.

We decided to head over to the prude beach of Hedo 3 to check out the festival.



We found fire pits in the sand with thin logs placed over the smoldering fires. There was jerk chicken and pork cooking and the aroma was incredible which made me hungry. I did feel bad for the cooks because the temperatures were in the high 80's on the beach and tending the fire pits was extremely hot.



We decided to try the jerk chicken which was our favorite because it was so tender and moist in your mouth. I was told by the cook at the Jamaican Jerk Festival that I needed to try his special sauce and decided it should be place on the side of my plate. Smart move. My mouth became alive with just a small amount of his sauce.



History of Jerk



I found out that Jamaican Jerk was the traditional cooking method by the people native to the Caribbean. By developing cooking smoking methods like Jerk was easily transported for food.

The Tainos constructed a grid of immature green sticks and placed them some distance above a shallow pit of smoldering ashes from a all green all spice-tree wood. The meat is placed on the grid and covered with all spice tree leaves along with spices to impart more flavor, while trapping the smoke for maximum effect.

Ingredients: Spicy Jerk Sauce



  • 1 big bunch of green onions or a couple smaller bunches
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 tbsp salt
  • juice of 1 lime
  • 1/2 tsp dried thyme, or 1 Tbls fresh thyme
  • 1 tbsp allspice
  • 1-10 scotch bonnets. Start with a small amount and add more lately if you think it needs it.
  • 1 thumb sixed knuckle of ginger and just blend it up skin and all
  • 3 cloves of garlic
  • 1/2 a small onion
  • 2-3 tbsp of brown sugar


  • Cooking Instructions



    Mix it all together in a blender and turn it into puree. Don't add water and just keep blending.

    Now taste it. It should taste salty, but not puckering salty. you want this to sort of brine the meat as it marinates and should not taste salty when you eat it with the meat. You can add more chiles if it's not spicy enough for you.

    Authentic jerked meats are not grilled as we think of grilling but to get a more authentic jerk experience, just add wood chips to your BBQ. Cook your meat over slow indirect heat.
